After evaluating the restaurant's demand, Mallick replaced the storage-tank arrangement with an on-demand tankless system.
The installation reused existing flue pathways as sleeves for concentric venting, limiting structural changes while supporting ventilation and system performance.
Hot water is not a convenience in a restaurant. Food preparation, dishwashing and daily sanitation all stop without it, which is why the kitchen wanted the upgrade planned rather than discovered.
The old storage tanks reheated their contents around the clock whether the kitchen was busy or closed, which is where the fuel was going. Removing the 75-gallon tank also gave back floor space in a room that had none to spare.
