How a grease trap works

A grease trap, or grease interceptor, is a tank the kitchen's wastewater passes through on the way out. Inside, it separates by weight: solid food settles to the bottom, fats and oils float to the top, and the effluent wastewater in the middle passes safely on to the sewer.

It works well, and it works only until the layers fill the tank. At that point FOG carries straight through into the line — which is the failure everybody eventually sees as a blocked kitchen drain rather than as a trap that was overdue.
